Ingredients:
- 2 tbls Olive oil
- 1 Onion, cut into rings
- 1kg Excellent Meat Tenderized Steak (Class A)
- 1x Red pepper, de-seeded and thinly sliced
- 15ml Mexican seasoning (Available at Excellent Meat Market)
- 1 cup / 250ml Beef stock (Available at Excellent Meat Market)
- 1 pkt Mini Rotis (Available at Excellent Meat Market)
- ½ cup / 125ml Sour cream
- ¼ cup / 60ml Corn kernels
- 1x Avocado, sliced
- 1x Jalapeno, chopped into rings
- 1x Red onion, sliced into rings
- To garnish: Fresh Coriander / Dhania
- Preheat the oven to 140⁰
- Over a medium to high heat sauté the onion with the oil in a medium sized saucepan for 4 -6 minutes – until translucent.
- Add in the tenderized steak and red pepper – allow to sauté for 2 to 3 minutes. Then add in the Mexican seasoning and allow to cook for another 3 to 4 minutes.
- Over a high heat, place the mini rotis on a skillet/frying pan for 2 to 3 minutes per side (until golden).
- To assemble the tacos –fill the taco shells with Excellent Meat tenderized steak mix and then top/serve with sour cream, corn, avocado, jalapeno, red onion and coriander.
